Pronto Slice is launched

Welcome to Pronto Slice – the latest addition to the portfolio of Edinburgh street food specialists Belmonte Catering; and bringing the authentic taste of Roman-style pizza to Scotland for the first time.

Pronto Slice – located just a few steps down from Edinburgh Castle esplande – specialises in ‘pizza al taglio’, which translates as pizza by the slice.

Although a regular sight in small pizzerias across Rome and central Italy, Pronto Pizza is the first to introduce this new style of street food pizza to Scotland.

Belmonte Catering founder Michael Notarangelo spent months researching and perfecting the recipe for pizza al taglio – including using his Italian heritage and the knowledge of his late nonna or grandmother –  to ensure it is an authentic as possible.

Michael said: “Our family comes from the Lazio region – which has Rome as its centre – and across the region, there are loads of places selling simple but excellent pizza al taglio. It’s a way of life for Italians to stop for a slice or have it wrapped up to take home.

“So when it came to developing the next project in the Belmonte Catering Scotland street food operation, I knew we’d be onto a winner with Pronto Slice.

“While other places sell pizza by the slice, no one before has served authentic pizza al taglio in Scotland.

“It differs from other pizzas as its thin, crispy and slightly moist on top. I spent hours working on dough hydration levels to ensure the pizzas are light, yet crunchy underneath. That results in a pizza you can indulge without feeling bloated.”

Mile High Pizzas

Customers to Pronto Slice on the Royal Mile are greeted with a tempting counter display of pizza, just like they would be if in Rome pizzeria  – the pizzas are cooked in giant bases which are made fresh each day before being sliced to order and served.

As well as the traditional margarita and pepperoni pizzas, Pronto Pizza is looking to offer new slice toppings, such n’duja and piccante spianata cured meat, and mortadella and mozzeralla.

Pronto Slice has also ensured its pizzas are made with best ingredients, including importing flour from Naples, mozzerella and San Marzano tomatoes.

Michael added: “While this is the first physical premises for Belmonte Catering and our Pronto Pizza street food operation, watch this space as we will be announcing our first ‘bricks and mortar’ site.

“And, of course, our Pronto Pizza continues to be available for private parties and large catering events.”
